The kepayang is a tall tree found in the mangrove swamps of SE Asia. It produces a black nut that has to be specially prepared before it can be eaten. It has a rich, earthy umami taste and our soup is prepared by stuffing the nut with minced oxtail meat. Scoop it out from the slit along the nut. The good stuff is inside!
